Vacuum Cooling Machine is a cooling equipment used in cooked food production.
The device is mainly composed of cooling chamber, vacuum system, cooling water circulation system, refrigeration system, chilled water circulation system and control cabinet.
2. Working principle:
The food to be cooled is layered in a closed vacuum chamber and vacuum is pumped by the vacuum system. Because the pressure in the kettle is close to absolute vacuum, the water inside the food evaporates at low pressure and low temperature. The latent heat of vaporization is absorbed by the evaporation of water. This heat comes from the food itself, so that the product can be cooled rapidly to achieve the purpose of cooling.
